Andre and Elsbeth Bollier emigrated from Basel to Kansas City, Switzerland, in June 1955 and opened their first brewery and bar in October of that year.
The owners also opened a huge black smoker loaded with ribs, pig shoulders and ribs. The 10-inch tortillas are packed with a mix of ingredients made from family recipes used by the founders when the restaurant opened more than 20 years ago.
